Sesame Ginger Teriyaki Sauce

Sesame ginger teriyaki sauce with chicken & jasmine rice
Ingredients:
 
1 cup teriyaki sauce
1 teaspoon freshly grated ginger
2-4 cloves of garlic, minced
3 tablespoons dark brown sugar
2 tablespoons honey
1/4 cup olive oil
1 tablespoon Sesame seeds (optional either in marinade or as a topping)

Directions:

In a large bowl whisk together the marinade ingredients: teriyaki sauce, olive oil, garlic, ginger, brown sugar, and honey. 
Pour marinade your favorite meat, poultry, or fish. 
Place in refrigerator for at least 1 hour.

Makes enough marinade for up to 2+ pounds of meat, poultry, or fish.

Chocolate Syrup

I came across this recipe for homemade chocolate syrup through Pinterest.

Ingredients: 

½ cup cocoa powder
1 cup water
2 cups sugar
⅛ teaspoon salt
¼ teaspoon vanilla



Directions:
 
Mix the cocoa powder and the water in a saucepan (medium to large in size).
Heat and stir to dissolve the cocoa.
My cocoa of choice
Add the sugar, and stir to dissolve.
Boil for 3 minutes over medium heat. Be careful not to let it get too hot and boil over! (I whisked the chocolate mixture almost the entire 3 minutes)

Add the salt and the vanilla  (I removed from heat before adding).
Let cool.
Pour into a clean glass jar, and store in the refrigerator. Keeps for several months, but trust me it will be gone before then.

Yields two cups.

Pan Gravy

Ingredients:

1/4 cup butter
1/4 cup flour
Pan drippings (chicken, turkey, roast...you get the idea)
Salt
Pepper

Directions:

Pour drippings into a grease separator
In large pan or skillet (I prefer skillet) melt butter over medium heat
Wisk in flour, making sure butter and flour are well blended
Let mixture start to brown
Turn down heat to low
Gradually add in small amount of drippings, wisk till blended
Continue to gradually add in small amounts of drippings until gravy is slightly runny.
Bring to boil, add more liquid if gravy becomes too thick
Salt and pepper to desired seasoning

Roasted Salmon with Dill Yogurt Sauce



I found this recipe on Marlene's Market and Deli's website. And yes I even copied their picture!

Ingredients

4 salmon fillets (about 6 oz. each)
2 Tbs olive oil

salt and pepper to taste
4 oz Greek yogurt
3 Tbs fresh dill
1 Tbs lemon zest and juice

Directions
  • Preheat oven to 400 degrees
  • Combine yogurt, dill, lemon zest and juice. Chill until ready to use.
  • Place salmon on foil or parchment lined sheet pan, skin side down. Drizzle with olive oil and sprinkle with sea salt and pepper. Bake until slightly firm and flakes with a fork, approximately 12-14 minutes.
  • Served salmon with dill sauce, steamed vegetables and brown rice for a heart healthy and delicious dinner.
