Pan Gravy

Ingredients:

1/4 cup butter
1/4 cup flour
Pan drippings (chicken, turkey, roast...you get the idea)
Salt
Pepper

Directions:

Pour drippings into a grease separator
In large pan or skillet (I prefer skillet) melt butter over medium heat
Wisk in flour, making sure butter and flour are well blended
Let mixture start to brown
Turn down heat to low
Gradually add in small amount of drippings, wisk till blended
Continue to gradually add in small amounts of drippings until gravy is slightly runny.
Bring to boil, add more liquid if gravy becomes too thick
Salt and pepper to desired seasoning
