Chipotle recipes

These recipes were taken from The Chew, which aired 02/27/12.

Lime Rice
  • 6 cup White Rice (cooked)
  • 2 tablespoon Cilantro (chopped)
  • 2 teaspoon Lime Zest
Cook the white rice according to the package directions. Toss the rice with the cilantro and lime zest.

Black Beans
  • 3 cup Black Beans
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Chili Flakes
  • 2 teaspoon Cumin
Cook the beans, then season with garlic, red pepper, and cumin.

Corn Salsa
  • 2 ears Corn (kernels stripped)
  • 1 Jalapeno (minced)
  • 1 clove Garlic (minced)
  • Juice of 1 Lime
  • 2 tablespoon Cilantro (chopped)
 Toss the corn, jalapeno, garlic, lime juice, cilantro, a pinch of salt and a pinch of pepper together.

  • 2 Avocados (pitted and cubed)
  • Juice of 1 Lime
  • 1 teaspoon Minced Garlic
  • Pinch Salt
  • Pinch Pepper
Mash the avocados with the lime juice, garlic, and salt. Season with pepper to taste. Adjust with more lime juice or salt if necessary to taste.
